Classic French Meets Yorkshire

Classic French cuisine is Simon Gueller’s mainstay, but his cooking is also highly contemporary. Favouring the ‘less is more’ approach, over the years he’s developed a purity of purpose that’s resulted in poised dishes such as roast sea bass with aubergine caviar, San Marzano tomatoes with aged Balsamic, or fillet of grass-fed beef with bone marrow crust and essence of red wine.

Simon says, “We’re so proud to be based in Ilkley, a town surrounded by the Yorkshire Dales and host to a variety of excellent restaurants, cafés, bars and food shops. We are lucky to have access to an abundance of local suppliers who take great pride in their wares – from award-winning cheesemakers, butchers and greengrocers to the Yorkshire triangle, which is famed for its rhubarb. All their dedication helps to provide endless gastronomic inspiration throughout the year, ensuring Yorkshire stays firmly on the culinary map.”
